Ingredients (Serves 2)

  • 50g Basmati Rice
  • 300g Frozen Broccoli
  • 250g Mushrooms/Aubergine
  • 1 Onion
  • 2 Carrots
  • 2 tbsp All-Purpose Flour
  • 160ml Vegetable Stock
  • 80ml Oat Milk/Cows Milk
  • 60g Cheese, Grated
  • 10g Panko Breadcrumbs
  • 15g Fried Onions

Method

Step 1: Prep & Cook the Rice

Preheat your oven to 320°F (160°C). Cook the basmati rice according to package instructions.

Step 2: Prepare the Veggies

  • Boil the broccoli in salted water for 3-5 minutes until tender but still firm. Drain and set aside.
  • Heat 1 tbsp of olive oil in a pan over medium heat. Add the mushrooms (or alternative), onion, and a pinch of salt. Sauté for 5 minutes until soft.
  • Stir in the carrots and cook for another 4-5 minutes. Add the flour and cook for 1 minute to create a light thickening base.

Step 3: Mix & Assemble

  • Add the vegetable stock, broccoli, and rice to the pan. Mix well.
  • Transfer everything into a casserole dish. Pour in the milk and stir in half of the cheese. Season with salt and pepper to taste.

Step 4: Make the Crispy Topping

  • In a bowl, mix the panko breadcrumbs with the fried onions and remaining cheese.
  • Sprinkle this crispy topping evenly over your casserole for that perfect golden crunch!
